Kombucha is a popular brew that contains tea, sugar, bacteria, and yeast. It's been going gangbusters for years in cities like Portland and San Francisco, but Jonathan Cox has just brought South Carolina its first native kombucha brewery: One Love Kombucha. Kombucha has a tendency to make governments nervous. It's fermented, which means it contains trace amounts of alcohol. Cox is quick to point out that all kombucha is bottled well before it hits the o.5 ABV threshold, but he says there are still hurdles with the Department of Agriculture. What's not a problem, though, is customer demand. Cox introduced his tea at the James Island and Johns Island farmers markets over the summer and regularly sold out his stock. Cox's lineup includes brews made with ingredients like basil, ginger, and spirulina. Many of his featured ingredients are from local farms, and Cox strives to include a local aspect to every bottle.
